Smothered Griddled Chicken

This is one of the first recipes I ever made! I have tweaked it over the years but we still cook it every week or two because its so good! This meal is also great as left overs so I make it for meal prep as well. Famous Smothered Grilled Chicken

Ingredients

  • 4 4 Boneless skinless chicken thighs or breasts We prefer thighs because they have more flavor and stay juicy.
  • 2 Bell Peppers One red and one green if you want it to look pretty.
  • 1 Sweet Onion I prefer Vidalia
  • 2 cups Sliced Mushrooms
  • 4 slices Colby Jack or Havarti cheese These are my two favorites but use whatever you like.
  • 1 tbsp Poultry Seasoning I like Spellbound Qnami from Lane's BBQ.
  • 1 tbsp Garlic and herb seasoning Garlic 2 from Lane's BBQ is great.
  • .5 cup Favorite Chicken Sauce/Marinade I like Pineapple Chipotle from Lanes BBQ.
  • 2 tbsp Avocado Oil
  • 1 tbsp Butter

Instructions

  • Add your chicken to dish or ziplock bag with the sauce/marinade.
  • Cut your onions and bell peppers intro strips
  • Clean and slice your mushrooms
  • Fire up your griddle on to medium high.
  • Add avocado oil to the griddle
  • Season one side of your chicken then lay that side down on the griddle
  • Season the top of your chicken
  • Add avocado oil to another part of the griddle
  • Add your onions and bell peppers in the oil and season with garlic and herb. Turn them every 2-3 minutes to ensure they don't burn.
  • When the chicken starts to turn white around the edges, flip it over then turn your griddle down to medium.
  • Add your mushrooms and butter then mix every 2-3 minutes.
  • When the internal temp of the chicken reaches 165, flip it one more time.
  • Begin assembling by adding the bell peppers, onions, and mushrooms to cover each of the pieces of chicken.
  • Top each one with a slice of cheese and cover with a dome to melt the cheese.
  • Once the cheese is melted, its time to plate and serve.
