How does a recipe become famous? I’d argue it happens the moment it leaves your family’s kitchen. When friends start asking for it, sharing it, and making it in their own homes. By that definition, this recipe is definitely famous. After being featured in several of my videos, it’s been requested from all over the world and has even received praise from some of the toughest critics. Does that make it world famous? I’ll let you decide.

In our family of twenty-five, one thing is certain: whenever we’re all together, Pop’s Pancakes will make an appearance.

My dad (known as Pop to the grandkids) has been flipping pancakes every Sunday morning before church since before I can remember. Over the last forty-plus years, his recipe has evolved into what we now proudly call Pop’s Famous Pancakes. You don’t even need to include the word homemade because you’ll know it from the very first bite. These fluffy, golden-brown, slightly savory pancakes are pure comfort on a plate.

Pop has never been one to gatekeep a good thing. Over the years, he’s shared this recipe with anyone who’s asked because something this simple and this delicious deserves to be enjoyed. He even let me record him making them during a recent family camping trip, which quickly became one of our most-watched videos. But this marks the very first time his recipe has been officially written down in full, ready to be shared with the world!

What follows is the basic version, the foundation of every batch. Pop loves adding frozen blueberries picked from his own bushes, and our family is split almost evenly between Team Blueberry and Team Plain. When Dad’s not around, a few of us have been known to stir in chocolate chips or even rainbow sprinkles (don’t tell him!).

Pop’s Famous Homemade Pancakes

Equipment

  • 1 Griddle or Large Pan We love making these on our outdoor griddle.
  • 1 8 Cup Mixing Bowl
  • 1 4C Measuring Cup
  • 1 Whisk
  • 1 Flipper

Ingredients

  • 2 cups Self-Rising Flour *White Lilly is highly recommended by Pop
  • 1 tsp Salt
  • 2 Eggs
  • 2 cups Buttermilk *Kroger brand is Pop's favorite
  • 1/2 tsp Vanilla Extract
  • 1 tbsp Cooking Oil

Instructions

  • Preheat your griddle or pan to 425 degrees
  • Add the flour and salt to a large mixing bowl and whisk to remove clumps.
  • Add the eggs, oil, and vanilla to a measuring cup and break the yolks.
  • Fill the measuring cup up to the 2 1/4 cup line (2 cup line if using regular milk).
  • Whisk the wet ingredients until well combined.
  • Pour the wet ingredients into the dry ingredients around the perimeter of the mixing bowl.
  • Slowly mix it together with a whisk but don't "beat it to death". Just ensure its all wet and there are no large clumps.
  • Add butter or bacon grease to the griddle
  • Pour your pancakes into the desired size, We prefer 6inch diameter.
  • Pop likes to put 5 frozen blueberries on the top of each pancake as soon as they are poured.
  • Wait until bubbles rise to the top and begin to pop. You should also see the edges start to firm up a little. Then flip your pancakes.
  • When they are done to your liking, remove the pancakes.
  • Serve with room temp butter and your favorite syrup.

Notes

Left over pancakes can be cooled, frozen, and enjoyed later! We freeze them in a single layer on a baking sheet then store them in freezer bags. To reheat them, I prefer using the toaster but an air fryer or even a microwave will do.
