Pop's Famous Homemade Pancakes

Our family loves gathering around the table and spending time with one another. We hope Pop's Pancake recipe will encourage your family to do the same.

Equipment

  • 1 Griddle or Large Pan We love making these on our outdoor griddle.
  • 1 8 Cup Mixing Bowl
  • 1 4C Measuring Cup
  • 1 Whisk
  • 1 Flipper

Ingredients

  • 2 cups Self-Rising Flour *White Lilly is highly recommended by Pop
  • 1 tsp Salt
  • 2 Eggs
  • 2 cups Buttermilk *Kroger brand is Pop's favorite
  • 1/2 tsp Vanilla Extract
  • 1 tbsp Cooking Oil

Instructions

  • Preheat your griddle or pan to 425 degrees
  • Add the flour and salt to a large mixing bowl and whisk to remove clumps.
  • Add the eggs, oil, and vanilla to a measuring cup and break the yolks.
  • Fill the measuring cup up to the 2 1/4 cup line (2 cup line if using regular milk).
  • Whisk the wet ingredients until well combined.
  • Pour the wet ingredients into the dry ingredients around the perimeter of the mixing bowl.
  • Slowly mix it together with a whisk but don't "beat it to death". Just ensure its all wet and there are no large clumps.
  • Add butter or bacon grease to the griddle
  • Pour your pancakes into the desired size, We prefer 6inch diameter.
  • Pop likes to put 5 frozen blueberries on the top of each pancake as soon as they are poured.
  • Wait until bubbles rise to the top and begin to pop. You should also see the edges start to firm up a little. Then flip your pancakes.
  • When they are done to your liking, remove the pancakes.
  • Serve with room temp butter and your favorite syrup.

Notes

Left over pancakes can be cooled, frozen, and enjoyed later! We freeze them in a single layer on a baking sheet then store them in freezer bags. To reheat them, I prefer using the toaster but an air fryer or even a microwave will do.
